Summer is here {it isn’t official until June 21st though}. The weather here has been quite summer-y for a little while now and the hot humid days are frequent.
I am all about cooling it down on sizzling days… Since becoming gluten free {spring of 2010}, I have found it hard to find good Popsicles that don’t contain gluten. I set out and found some I could make right in my own kitchen…
Ingredients:
1 Box {4 serving size} Chocolate Fudge (Sugar Free, Fat Free} Instant Pudding and Pie Mix
2 Cups Fat Free Skim Milk {Or whatever milk you drink… I use Lactaid}
1 Medium Ripe Banana
1 Container Yoplait Light Very Vanilla Yogurt
8 Waxed Paper Cups {5 oz size}
8 Craft Sticks {Flat with rounded edges}
Let’s Make Them…
1. In medium bowl, beat pudding mix and milk with wire whisk about 2 minutes or until well blended. Let stand 5 minutes or until thickened.
2. Meanwhile, in small bowl, mash banana with fork. Stir in yogurt.
3. Spoon in 2 tablespoons pudding into each cup. Divide yogurt mixture evenly among cups. Top with remaining pudding mixture. Tap cups on the counter top to level the tops. Insert wooden stick into center of each pop.
4. Freeze pops for about 2 hours or until solid. Store frozen pops in plastic freezer bag. Peel off paper cups before serving.
5. Eat and Enjoy.
