Cooking gluten free? We are (and have since last spring 2010). We have found it extremely hard to find recipes that are delicious and quick… especially for those times when making something from scratch just isn’t an option!
We have found some!! That’s right… some really, really delicious one’s! I am a nut about gluten free because I have to be, so Kevin makes the sacrifice too! Love him! I have been on the hunt for delicious Fall, Christmas and Wintery recipes that are both good and gluten free… boy have I found some! We decided to start preparing for the holidays and giving the recipes a trial run before they become a “staple” in our holiday meals. (If you too are gluten free… you understand having to give everything a trial run).
So… come along for our journey (even if you do eat gluten… I promise it will be well worth it)! Some will be from scratch and some from the “box”… but none will disappoint!
Up First…
Enjoy this great (gluten free) banana bread recipe with us…
Prep Time: 15
Total Time: 2Hrs, 40 Min
Ingredients:
1 box Betty Cracker Gluten Free yellow cake mix
1 Cup mashed very ripe bananas (2 medium)
1/2 cup butter, softened
3 eggs (we always use organic)
1/2 cup chopped walnuts, if desired (we don’t use any nuts because the Mr. doesn’t like any)
Let’s make it…
1. Heat oven to 350 degrees. Grease bottom of 9 x 5 inch or 8 x 4 inch loaf pan with shortening or butter.
2. In large bowl, beat cake mix, mashed bananas, butter and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
3. Bake 9 inch loaf 55 to 60 minutes, 8 inch loaf for 1 hour 5 minutes to 1 hour 15 minutes, or until toothpick is inserted in center comes out clean. (Please sheet of foil over loaf to prevent overbrowning. Cool 10 minutes. Loosen sides from pan; remove from pan to cooling rack. Cool about 1 hour before slicing. (We didn’t wait… it smelled so good we had to try it right away).
It makes about one loaf (16 slices). This recipe was fantastic! It is going to be wonderful for the holidays and even for breakfast with some coffee! It is actually so good you don’t even know it is gluten free! I promise!
